Ingredients :
- 2 cups (500ml) flour
- 2 cups (500 mL) fresh or frozen cranberries
- 1 and a half cups (375 ml) sugar
- 1 cup (250ml) butter
- 1 package 8 oz (1 cup) cream cheese, room temperature
- 4 eggs at room temperature
- 1 and a half teaspoons of vanilla
- 1 and a half teaspoon baking soda
- 1/2 tsp salt
Preparation :
- Preheat the oven to 350°F (175°C). Grease a 9×5 loaf pan well with non-stick oil.
- In the bowl of your mixer, cream the butter, cream cheese and sugar.
- Then add one egg at a time, continuing to beat. Then vanilla.
- In another bowl, combine flour, baking soda and salt.
- Gradually combine the dry ingredients into the wet ingredients, mixing until well blended.
- Add the cranberries and mix.
- Pour into the bread pan.
- Bake for 60 to 70 minutes or until toothpick inserted comes out clean.
- Remove from the oven and let rest for at least 15 minutes before serving.
- Freezes well.
