Ingredients :
- 2 medium sized spaghetti squash
- 2 cups (500 mL) shredded chicken
- 1 cup (250 mL) cheddar or mozzarella cheese
- 1/3 cup (85 ml) red hot sauce
- 2 tablespoons melted butter
- 1/3 cup (85 ml) Greek yogurt
- 1 jalapeno pepper, diced
- 1/4 cup (65 mL) thinly sliced green onions
- Salt and pepper to taste
- Blue cheese (optional)
- Extra grated cheese to garnish
Preparation :
- Preheat the oven to 400°F (200°C).
- Slice your spaghetti squash lengthwise. Remove the seeds.
- Line a baking sheet with a sheet of aluminum foil.
- Place the squash on the baking sheet and cook for 30 to 40 minutes.
- Meanwhile, cook the chicken, if it hasn’t already been done. Shred it with 2 forks.
- In a bowl, combine the shredded chicken, cheese, hot sauce, melted butter, Greek yogurt, jalapeno, green onions, salt and pepper.
- With a fork, loosen the center of your spaghetti squash and toss with your chicken mixture.
- Top each squash with a little extra cheese.
- Cover with foil and bake at 350°F (176°C) for 20 minutes.
- Put 1 to 2 minutes to BROIL.
- Top with more green onions, dressing, hot sauce, etc. AS YOU LIKE!
