Ingredients :
- 3/4 cup (190 ml) balsamic vinegar
- 1/4 cup (65 ml) honey
- 3 minced garlic cloves
- 2 tablespoons olive oil
- 2 teaspoons Italian spices
- 1/2 tsp salt
- 1/4 teaspoon pepper
- Salt and pepper (to taste)
- 4 boneless, skinless chicken breasts
- 4 slices of mozzarella cheese
- 2 avocados, diced
- 3 Roma tomatoes, diced
- 1/4 cup (65 mL) fresh basil
- Salt and pepper (to taste)
- A drizzle of balsamic vinegar (optional)
Preparation :
- In a medium-sized bowl, combine the balsamic vinegar, honey, garlic, olive oil, Italian spices, and salt and pepper. Add the chicken and mix well to coat. Leave to marinate in the refrigerator for 30 minutes.
- Meanwhile, in a small bowl, add the pieces of avocado, tomatoes, basil as well as salt and pepper (to taste). Put aside.
- Heat the barbecue to medium high.
- Grill the chicken for about 6 minutes on each side or until cooked through!
- Cover with mozzarella and avocado mixture.
- Drizzle with balsamic and serve immediately.
