The best breakfast casserole recipe of potatoes, sausages and peppers!

Ingredients :

  • 10 red potatoes, diced
  • 10 to 15 mini bell peppers, diced
  • 1 onion diced
  • 2 sausages, sliced
  • 1/2 cup (125ml) olive oil
  • 2 tablespoons lemon juice
  • 3 minced garlic cloves
  • A few sprigs of rosemary

Preparation :

  1. Preheat the oven to 500°F (260°C).
  2. Wash well, peel (optional) and dice the potatoes.
  3. In a large bowl, combine oil, lemon juice, garlic and rosemary.
  4. Add potatoes and onions. Shake well.
  5. Add to a large Pyrex dish.
  6. Bake for 30 minutes, stirring every 10 minutes.
  7. Add the sausages and peppers.
  8. Bake for another 15 minutes.
  9. Serve immediately or freeze.
  10. To reheat, thaw and bake at 450°F for 15 minutes.
