Ingredients :
- 6 liters (24 cups) of water
- 2 lbs yellow peas
- 2/3 cup (170 ml) chicken broth
- 1 cup (250 mL) thinly sliced yellow onion
- 1/2 lb salted bacon
- 3/4 cup (190 mL) diced carrots
- Salt and pepper
- A few parsley leaves
Preparation :
- Soak the yellow peas in a bowl filled with water for at least 4 hours. It’s even better if you can leave them overnight. Drain.
- In a large cauldron, pour the 6 liters of water and add all the ingredients. Boil for 1 hour, stirring often.
- Reduce heat to low and simmer for 1 hour, stirring often.
- It freezes very well for stocking up! ????
