Ingredients :
- 1 cup (250ml) sugar
- 1/2 cup (125 ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (125ml) flour
- 1/3 cup (85 ml) cocoa powder
- 1/2 teaspoon baking powder (baking powder in Europe)
- 1/2 tsp salt
- 1 cup (250 mL) diced rhubarb
- 1/2 cup (125 mL) chocolate chips
Preparation :
- Preheat the oven to 375°F (190°C). Line an 8 x 8 Pyrex dish with a sheet of parchment paper and lightly spray with oil.
- In a bowl, combine the sugar, oil, eggs and vanilla.
- In another bowl, whisk together flour, cocoa, baking powder and salt.
- Add the wet ingredients to the dry ingredients and mix well.
- Add rhubarb and chocolate chips. Mix well.
- Pour into the dish.
- Bake for 25 to 30 minutes or until toothpick inserted comes out clean.
- Let cool. Cut into 16 squares.
- Freezes well.
