The best egg and sweet potato breakfast muffin recipe!

Welcome » Lunch » Egg and Sweet Potato Breakfast Muffins

Ingredients :

  • 1 small grated sweet potato (about 1/2 cup when grated)
  • 1/4 cup (65 mL) grated cheddar cheese
  • 1/2 teaspoon garlic powder
  • 8 large eggs
  • Salt and pepper to taste

Preparation :

  1. Preheat oven to 375°F (190°C) and spray 8 muffin cups with oil (or place paper cups).
  2. Peel a sweet potato and grate.
  3. Put the sweet potato, cheese and garlic powder in a bowl. Combine well.
  4. Pour into muffin tins.
  5. Crack an egg on top of each muffin. Season with salt and pepper.
  6. Cook for 13 to 15 minutes.
