Ingredients :
- 2 cups (500ml) flour
- 2/3 cup (165 ml) sugar
- 1 teaspoon kosher salt
- 3/4 cup (190 ml) cold butter
- 3 tablespoons honey plus a little more for brushing
Preparation :
- In the bowl of your mixer, combine the flour, sugar and salt. Add chunks of butter and beat lightly until it starts to lump.
- Add honey and stir until it forms a ball. Cover and refrigerate for 30 minutes.
- Preheat the oven to 325°F (160°C).
- On a lightly floured surface, roll out your dough to about 1/4 inch thickness.
- Cut cookies with a cookie cutter.
- Place the cookies on a baking sheet that has been lined with a sheet of parchment paper.
- Cook for 15 minutes. Remove from the oven, brush with a little honey.
- Let cool.
- You can add a little fleur de sel.
- Store in an airtight container.
