Ingredients :
- 2 skinless chicken breasts (about 1 lb/453 g)
- 1/4 cup (65 ml) flour
- 1 egg
- 3/4 cup (190 ml) panko breadcrumbs
- 1/2 cup (125 mL) grated Parmesan cheese
- 2 tablespoons olive oil
- 1 cup (250 ml) tomato sauce
- 1/2 cup (125 mL) shredded mozzarella
- Basil (optional)
Preparation :
- Cut the chicken breasts in half lengthwise. Flatten the pieces until about 1/2 inch thick. Sprinkle with salt and pepper.
- Add the flour to a plate. To book.
- Add the egg to a bowl and whisk with a fork.
- Add breadcrumbs and Parmesan cheese to a bowl and mix well.
- Dip the chicken in the flour, then the egg mixture and finally the Parmesan breadcrumbs.
- Heat oil in a saucepan.
- Cook for 2 to 3 minutes on each side or until cooked through and golden brown.
- Transfer to a baking sheet lined with parchment paper.
- Top with mozzarella cheese.
- Cook on BROIL for a few minutes.
- Garnish with tomato sauce and basil.
