Radish and peas, fresh cheese, garlic and mint dipping sauce
With the arrival of a little heat, I wanted to make a small light entry. I spotted this photo on instagram and I had noted myself to try, I find that too pretty. So I didn’t find the recipe but I made my idea and it’s really super pretty and very impressive mother-in-law I think ???? .
For this recipe I chose a bunch of multicolored radishes, it brings a lot of colors. For the fresh cheese, you can take a fromage frais, skyr or even Greek yogurt (the real one).
To be enjoyed as a starter or during an aperitif. It’s fresh, tasty and fragrant.
You need for 4 people
If you use a fromage frais, drain it well (through cheesecloth for example). Otherwise with Skyr or Greek yogurt, it’s not worth it. Peel the garlic cloves, degerm them and chop them. Shell the peas and rinse them. Wash the mint leaves and pat them dry. Clean the radishes.

Once the cheese is well drained, add the pressed garlic, salt and olive oil. Mix well.

Arrange this preparation on a plate. Then plant the radishes in it, add the peas and mint leaves and decorate with chive flowers if you have.

It’s delicious, full of freshness. Raw peas remind me of my childhood, when I used to go to my grandfather’s garden and pick pods to peck at the peas. So good, so sweet. A real Proust’s Madeleine.
