Ingredients :
- 1 and 1/4 cup (375 ml) flour
- 1/2 cup (125 mL) brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon of magic baking powder! (baking powder in France)
- 1/2 teaspoon nutmeg
- 1/2 tsp salt
- 1 cup (250 mL) old fashioned oatmeal (not instant)
- 1/2 cup (125 mL) raisins
- 3 tablespoons extra-virgin olive oil
- 1 large egg
- 1/3 cup (85 ml) skim milk
- 1 and a half cups (165 g) grated carrots
- 1 mashed banana
Preparation :
- Preheat the oven to 400°F (204°C). Spray your 12 muffin pan well with Pam-style oil.
- In a large bowl, combine the flour, brown sugar, baking soda, baking powder, nutmeg and salt. Add oats and raisins.
- Add oil, egg, milk, carrots and mashed banana. Mix well.
- Fill each muffin cup with 1/4 cup (65 ml) of the mixture.
- Bake for 18 to 25 minutes or until toothpick insert comes through cleanly.
- Store in an airtight container for 1 week.
