Ingredients for the spring rolls (8 rolls):
- 8 sheets of rice for spring rolls
- 1 bag of rice vermicelli
- 2 boneless chicken breasts
- 1 cucumber
- 1 shallot thinly sliced
- 1 avocado
- 2 carrots
- fresh coriander
Sauce ingredients:
- 4 tablespoons of soy sauce
- 1 clove of garlic
- 1 lemon
- 1cm ginger
- 1 small (hot) pepper, finely chopped
Preparation :
- Cook the chicken breasts in the pan and cut them into strips.
- Wash and peel the carrots as well as the cucumbers, cut them into julienne.
- Cut up the avocado and put it in a small bowl.
- Soak the rice vermicelli in lukewarm water for about 10 minutes.
- Soak the rice papers in hot water one by one until rehydrated. Remove them from the water and place them on a clean, damp cloth.
- On each sheet of rice, place coriander leaves, pieces of chicken, shallots, a few juliennes of cucumber carrots, a few pieces of avocado and the rice vermicelli.
- Gently fold the edge of the rice sheet in front of you, tighten the preparation well, then fold the edges of the rice sheet towards the center and start rolling, continuing to tighten.
- Store the rolls under a damp cloth that you can leave in the refrigerator. I suggest eating them now ????
For the sauce now:
- Cut the garlic very finely and grate the ginger over a bowl.
- Add the chilli, soy sauce, 1 tbsp water and 1 tbsp lemon juice.
- Mix.
