Ingredients :
- 1 lb (0.45 kg) chicken breasts
- 1 tablespoon olive oil
- Salt and pepper
- 3 minced garlic cloves
- 1 medium sweet potato, peeled and diced
- 1/2 cup (125 mL) chicken broth
- 1/2 lb (225 grams) chopped asparagus
- 1/2 tsp salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili flakes
Preparation :
- Cut the chicken breasts into small pieces and season with salt and pepper.
- In a saucepan over medium heat, add the olive oil, garlic and chicken. Sauté the chicken for 7-10 minutes. Set the chicken aside.
- In the same pot, add the sweet potatoes and the chicken broth. Cook for about 7 to 10 minutes or until the sweet potatoes are cooked.
- Add the asparagus and cook for 4 to 5 minutes.
- Return the chicken, and season with salt, pepper and chili flakes.
- Reheat the chicken for 2 to 3 minutes.
- Serve!
