- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with oil.
- In a saucepan, scramble the eggs with salt and pepper.
- Lay out the croissant rolls. Combine two triangles together to make a rectangle and seal the corners well.
- Put 1/4 of the egg mixture in the center. Add ham and cheese (cheddar and feta).
- Roll up each pouch, sealing them properly.
- Make small incisions on the top of the pockets and put on the baking sheet.
- Cook for 10 to 12 minutes.
