Ingredients :
- 3 lbs red potatoes, cut into quarter-inch pieces
- 1/2 cup (125 mL) fresh rosemary
- 1/2 cup (125 mL) fresh thyme
- Kosher salt for sprinkling
- Peanut oil for frying
Preparation :
- Place the potato pieces in a bowl of ice water for about 1 hour. We do this to get the starch out of the potatoes.
- Transfer the potatoes to paper towels to dry them well.
- Heat oil in deep fryer or stockpot to 250°F (121°C).
- Fry until potatoes are tender, but not long enough to brown.
- Drain excess fat with paper towels. Let cool.
- Heat the oil to 350°F (175°C).
- Return the fries to the fryer until they are golden brown and lightly browned.
- Add the herbs.
- Sprinkle with salt.
