- Preheat the oven to 400°F (200°C). Line a baking sheet with a sheet of parchment paper.
- Open and unroll the croissants on the parchment paper. Separate each sheet in the middle so that you have 4 large squares of pasta. Press the perforation holes to seal well.
- Roll up the corners of each crescent.
- Crack two eggs in the center of each pastry. Sprinkle with parmesan, salt and pepper.
- Place 3 slices of bacon in the center of each croissant and sprinkle with the remaining parmesan.
- Bake for 10 to 12 minutes or until golden brown.
- Garnish with fresh parsley.
- To serve!
